I love the holidays, partly because I have seasonal depression and seeing some family makes me feel a little better.
This holiday season, I will be spending time in my new home with my husband and my dogs. I'm already preparing for my downsies by occupying myself beyond belief. I have become Ina Garten (Barefoot Contessa) in the kitchen. Every weekend alone, I'm using my creative mind and cooking up a storm. Last week I made brownies, pumpkin cookie bites, and coconut curry pumpkin soup. I am on my game. The challenge here is to make everything as healthy as possible without sacrificing on taste. *Except for the brownies, they were for a bake sale. Yesterday I stuffed some acorn squash with wild and white rice with turkey sausage. YUM! It was very filling. I really could only eat one half of the squash. While on the topic of food and eating better, I must admit that I grew up eating meat with every meal. Bacon or sausage for breakfast, some sort of meat for lunch, and a heaping helping of meat for dinner. I am trying now to incorporate meat with only one of my meals and that is usually dinner. I am also addicted to turkey bacon and sausage. I'm not against pork AT ALL but turkey bacon is the best and it just so happens to be healthier.
The real challenge will be to see what I can come up with for Thanksgiving!
